HEALTHY PIZZA alternative: Quick and Easy Recipe!

Pizza is by far one of my FAVORITE foods. But we all know pizza is a big no-no when it comes to eating healthy! Of course I’m constantly thinking of ways to make some of my favorite not-so healthy  foods into a nutritious option…so in comes one of my top ten veggies..ZUCCHINI!

What do you get when you combine ZUCCHINI + PIZZA……PIZZINIS! These are bite sized zucchini pizzas that are delicious AND nutritious! They taste grrreat and the best part is you can eat half the pan and not feel guilty! These are great as appetizers, party foods, or as a meal! I like to eat them as a lunch or dinner served with a nice spinach salad! My friend Jen has also made them using eggplant instead of zucchini so you can always be diverse and use zucchini, eggplant, or yellow squash. Every time I’ve made these for people…they’ve been gone in less time it took to make them!

How to make Pizzinis:

What you need:

  • Two large zucchinis
  • Organic pizza sauce
  • Organic shredded mozzarella cheese or Vegan cheese
  • Pizza toppings of your choice-such as mushroom, bell pepper, tomato, onion, chopped spinach, olives; IF you’re going to use meat try using turkey pepperoni or turkey sausage! Ideally, stick to the veggies!

*First Preheat oven to 375 degrees.

*Chop all pizza topping ingredients into very small pieces.

*Cut zucchinis into about 1/3 in. wide slices and place on baking sheet.

*Place a small spoonful of organic pizza sauce onto each zucchini circle.

*Sprinkle oregano over all of the pizzinis ( I like a lot of oregano)

*Then place desired pizza toppings onto each pizzini.

*Place a large pinch of mozzarella or vegan cheese on top.

*Bake for about ten minutes or until cheese is lightly browned.

VEGGIE PIZZINIS!

Turkey PEPPERONI PIZZINIS!
